The 11 and 12 cm blades are recommended for cutting the whole wheel, while the 9 and 10 cm blades are recommended for cutting the cheese flakes.

Also very interesting is the 10 cm knife with a thin blade, ideal for cutting very aged cheese, because it greatly reduces the effort in inserting the blade into the cheese.
