For manual cutters, it is recommended: from 0.6 mm wire for semi-aged cheeses (Pecorino, Asiago, Fontina, Nostrano) to 0.8 mm (for Parmigiano Reggiano, Grana Padano or similar) thickness; the 1 mm thickness is recommended for the SEZ13 portioning machine.

The best solution for soft cheeses is the thinner wire, while for harder cheeses, it is not recommended due to the significant risk of breaking.

Cleaning with a damp cloth is recommended before use.
